Weekend Reminder ~ Vegetables and Fruits

Vegetables and fruits should predominantly be the foods consumed on a daily basis. Wheather they are consumed singly, in a casserole, or blended in a shake, take the time to prepare meals with high nutrient-dense foods. Carrots, beets, and leafy greens are just a few vegtables that I should be consuming more often. What vegtables do you reccomend and how do you prepare them?
